Honey is amazing because Honey Bees are amazing!!!  And Honey Bees are gosh darned important to what we grow and eat.
Honey is a sweet food made by bees using nectar from flowers.  Honey Bees transform nectar into honey by a process of regurgitation and evaporation. They store it as a primary food source in wax honeycombs inside their beehive.  Honey gets its sweetness from the monosaccharides fructose and glucose.  It has approximately the same relative sweetness as granulated sugar.  Honey has attractive chemical properties for baking and a distinctive flavor that leads some people to prefer it over sugar and other sweeteners.   And if you eat local honey, it is believed that your allergies build a self regulated immunity to local pollens and pathogens.  How cool is that!  It tastes great AND it’s good for you!  Walhill Farm currently has 2 thriving beehives, and we hope to double that in the spring of 2015.
